Ivan Chai Workshop

Ivan chai is a fermented, aromatic and powerful herbal tea made from the leaves and flowers of fireweed (willowherb). On this day we'll learn to identify, forage, process, and ferment fireweed.

The tradition of making and drinking fermented fireweed tea (Ivan chai) comes from Slavic peoples; in Estonia it was popularised by the Old Believers. The history of Ivan chai is full of contradictions and mystique — right up to recent claims by ethnobotanists that the folklore around the tea is invented and a PR trick. Whatever the truth, the long tradition of preparation, its powerful effect, and its unique flavour remain. On this day we'll learn to recognise and forage fireweed, wither, hand-roll and ferment the tea, taste fermented fireweed tea (including a cold brew), and share a tasty plant-based lunch together! The special lunch is made from seasonal wild edible plants and fermented foods. Every participant takes home their own hand-made tea and the knowledge to repeat the process at home. Note: this day only takes place during a specific period (late June–late July) and is intended for groups by prior arrangement only.
