During her residency at the Nordic Food Lab, Liis Tuulberg collaborated with Marilyn Koitnurm and Maya Hey to develop a saison-style beer flavoured with false quince (Chaenomeles). False quince is a rather underused ingredient, and this project explored its wider possibilities.
